Creamy Colcannon Mash:

Serves 4-6

INGREDIENTS

1kg potatoes, peeled and dicedCreamy Colcannon Mash

250g savoy cabbage, finely sliced

1 bunch of spring onions, finely sliced

2 tablespoons of butter

75ml of milk

A good pinch of sea salt and black pepper

Method:

Add the peeled and diced potato to a pot of cold water, cover, place over a high heat and bring to the boil. Reduce heat and simmer until the potato is tender when pierced with a fork.

Place a metal steamer into another pot, add a little water and bring to the boil. Place the cabbage into the steamer and steam cook until it is tender.

When the potatoes are cooked, remove from the heat, drain into a colander, then add back into the pot with the butter and milk. Using a potato masher, mash the potatoes until smooth and creamy. You may want to add a little bit more or less milk and butter, it is up to you!

Add in the spring onion, steamed cabbage, sea salt and black pepper and stir through with a spoon until evenly combined.

Serve the colcannon straight away with a little extra butter and sea salt if you want.

Cooking Turnips:

Another popular meal in Ireland is made from turnips. As Ireland has a wet climate it’s the perfect place for growing turnips which is popular in the farming industry. Like potatoes the turnips are cheap to purchase, easy to make and can be added to a variety of meals.

INGREDIENTS

• Turnips – 1lb to serve 4 people

• Butter – ¼ cupcooked turnips

• Salt & black pepper

PREPARING THE TURNIPS

First wash and peel the turnips.

Cut the turnips into small cubes.

Place the cubed turnips into a large pot of salted water and cook for approx 20 minutes or until tender.

When cooked drain the turnips.

Using a large frying pan melt the butter in the pan and then add the cubed turnips.

Cook the turnips for approx 5 – 10 minutes or until a golden color.

Once cook some people prefer to mash their turnips in the same way mashed potatoes are made and serve them in a large dish.

Ideas for using turnips in meals

The great thing about turnips is not only how easily they are cooked but also the variety of meals they can be added to. For most people turnips are usually added to a meal that includes potatoes, something like the bacon and cabbage recipe or even mashed potatoes.

Possibly one of the most common meals with turnips is mashed potatoes, sausages and gravy but every Irish family have their own unique dish.

 

IRISH POUNDIES (CHAMP):

A big hefty Irish meal to try is Champ, which is also known as Poundies, Cally or Pandy. It is a very cheap and easy meal to create so is ideal for those on a low budget but is highly recommended for everyone to try.

INGREDIENTS

• 1lb of Potatoespoundies

• 8-10 Spring onions, also known as scallions, eschallots, shallots or Cibies

• pint of milk

• 6oz of butter

Method

Wash and peel the potatoes and boil in a large pot until fully cooked, make sure to drain the potatoes once fully cooked.

Add a spoonful of butter and a little milk to the pot and proceed to mash the potatoes until smooth, its advisable to use a hand masher over an electronic mixer. To get the best result of mashed potatoes make sure there is no lumps or hard pieces, creamy mashed potatoes taste better.

Slice and cut the spring onions into small pieces, now depending on your location spring onions maybe referred to as one of the above mentioned. Once cut into small pieces add them to the mashed potatoes and mix.

Serve the mashed potatoes onto warm plates or bowls but here is the important part, shape the servings into a volcano shape adding a well in the middle of the serving. Add a spoonful of butter into the well of each serving and then fill with milk.

Champ Variations

There are many things you can add to Champ to make it more interesting, depending on your likes or dislikes of certain food groups. Common to some Irish families in Ireland is creating Champ with sausages and baked beans or even adding fried eggs.

A personal favorite is adding Sausages, peas, gravy and onions.
